Salmon roe dressing

200 grammes of salmon roe
2 small cucumbers cut in small cubes
half a red onion finely chopped
one tablespoon of capers finely chopped
one carrot boiled and cut in small cubes
finely chopped dill, chervil and parsley
2 dl. Creme fraiche
a little lemon juice

Procedure

whip creme fraiche with a little water and lemon juice
season with salt and pepper
then mix cucumber, capers, red onion, carrot with dill,
chervil and parsley. Mix well.
Add roe and mix carefully.

To be served with smoked fish or as a cold sauce with
baked or fried fish
