1990 – 1994

Apprenticed cook in 1994 following 4 years education in both Germany, Sweden and
Denmark.
During this period part of the Youth All Denmark Team, where it won silver medal at the cold kitchen competition in Karlsrode (?)
Gold medal at World Championship for young cooks in vegetarian kitchen
Silver medal at OL in Berlin for young cooks
Silver medal at World Championship for young cooks team

1995 – 1998

Chef of kitchen at restaurant OLSEN in Copenhagen
Author of the first cook book ”Kirk’s Fish”
Participated in ”Good Morning Denmark” (TV2) for 3 years with small, light dishes for the people once a week
In Guinness Book of Records with ”the world’s fastest menu”: 3 dishes for four persons in 2 minutes and 8 seconds, made by two cooks

1998 – 1999

Opened the restaurant KIRK in Copenhagen’s BOLTENS GAARD together with 5 partners.
Chef at same.
Restaurant KIRK was selected (together with 15 other restaurants) one of Scandinavia’s best kitchens chosen by the Swedish gourmet magazine.
Author of the book: ”The green world of Nikolaj”
