Accompaniment to Foie Gras
Fried Figs
6 8 fresh figs,
20 grammes butter
1 deciliter good Balsamico vinegar
2 tablespoonsful honey
a little plucked thyme
a little grated lemon rind
4 slices of toast
Procedure
Divide the figs into smaller pieces and remove the flower.
Melt the butter in a pan and roast the figs in that. Let them become golden and then pour on the vinegar.
Boil this off and then add honey. Boil to thickness.
When serving sprinkle with thyme and lemon peel.
