Smoked Salmon salmon supérior from Rossini Caviar is smoked in the old-fashioned way, in old smokeovens with wood chips, as it was normal 50 years ago.
The smoking differs much from more modern, industrialised ways of smoking, by being more time consuming and thereby also more costly. It is a long proces requiring experience and constant attention to the salmon, but the method brings out all the important nuances of taste in the product.
Rossini Caviars special seasoning has been developed over a long period, and gives the salmon a mild, sophisticated taste and aroma.
We smoke salmon from both Norway and Scotland.
