Oscietre. Latin name: Acipenser gueldenstaedti.
In many ways the Oscietre sturgeon is interesting compared to other kinds of sturgeons in that its eggs may vary both in colour as in size and taste.
The Oscietre sturgeon may grow to a length of 2 meters and weigh as much as 200 kgs.
Oscietre sturgeons caught today are rarely more than 1,5 m long and generally weigh from 20 kgs. to 55 kgs.
The sturgeon begins producing eggs at an age of from 11 to 14 years, and may live to become from 60 to 75 years of age. The eggs vary on a scale of colours from dark grey over dark brown to golden.
