Excerpts from articles in the Danish gastronomical magazine ”Opus” edited by Peter Andreas Ingeberg:
TASTY OLIVE OIL
Another of the world gastronomic foundation stones is olive oil, shown here from the producer Marina Colonna of Martino outside of Rome. Virgin oil is ecological, unfiltered and produced traditionally by being crushed in stone vats. The taste is un-belivably refined with a flavour of chili and pepper, which in this case is part of the natural aroma of this sort of olive. The olive oil is also produced with extract of lime and orange peal. These oils are, in spite of every scepticism against this type of mixed products, unbelieveably well made, and the basic character of the olive oil is above all in front. Superbly delicious on a portion of radicchio salad or with fish.
75 cl. olive oil costs Dkr. 120, 25 cl. with lime or orange Dkr. 75.

FROM IRANIAN TO FRENCH CAVIAR
As the name suggests Rossini Caviar has quite something to do with caviar. The quality is named B1 and is the best qualification. Rossini imports Iranian, un-pasteurized caviar caught in the Caspian Sea. The taste is nothing but fantastic. Unfortunately the sturgeon is a threatened species, and the strict restrictions on
fishing resulted in decreasing production and rising prices. A new alternative is caviar produced from sturgeons from French river farms at the Gironde river.
Berge, former part-owner of YSL, in 1990 began by re-establishing production, which
was at its heighest in 1930 and 1940. This type of sturgeon is named Baerii and provides a caviar, which is on a par with the Iranian caviar. The price is lower,
breeding is sustainable, and no-one needs to live in fear of the last tin of caviar having been consumed. . There is great difference in the quality of caviar grant yourself the pleasure of trying this. Rossini trades in several quality products, take a look at www.Rossini Caviar.com and be inspired.
