The history of Sturgeon is a tale of luxury and refinement that stretches back to ancient times.

Revered by royalty and sought after by epicures, the sturgeon roe has long been synonymous with exquisite taste and sophistication and has been prized for its roe for thousands of years.

From the royal courts of ancient Persia to the palaces of Imperial Russia, caviar was a symbol of wealth and power, a delicacy that only the most elite could afford.

Over the past few decades, there has been a significant shift in the caviar industry from wild to farmed caviar.

This change was driven by the growing awareness of the environmental impact of overfishing and the subsequent decline in wild sturgeon populations.

The Founder and CEO of Rossini Caviar Jacob Rossini is recognized as one of the leading experts in caviar and is considered one of the first in the world to see the benefits of switching from wild to farmed caviar.

Farmed caviar has since become the dominant source of caviar worldwide. The sturgeons are raised in controlled environments, allowing for sustainable breeding and production of high-quality caviar without harming wild sturgeon populations.

Today, farmed caviar exclusively makes up the world market.

There are 27 different species of sturgeon in the world and come in a range of sizes, depending on the species.

From the smallest sturgeons at around 0,75 meters in length to the largest sturgeon species the Beluga sturgeon, which can reach lengths of up to 6 meters and weigh over a ton. Sturgeons reach maturity at different ages depending on the species.

For example, the Siberian sturgeon (Acipenser baerii) reaches maturity at around 8-10 years of age, while the Beluga sturgeon (Huso huso) can take up to 20 years to reach maturity.

Transparency is essential to our philosophy of making pristine caviar and we are dedicated to providing complete traceability at every stage of the production process.

Lot numbers on the back of each of our caviar tins are used to track that specific caviar back to the individual sturgeon from which it originates by assigning a unique code to each batch of caviar that we produce. The lot code includes information such as the date of production, the location of the caviar farm where the sturgeon was raised, and the specific species of sturgeon the caviar came from.

This ensures full traceability in the caviar’s entire journey from the sturgeon, throughout the caviar production process all the way to the serving on a plate.

CITES stands for the Convention on International Trade in Endangered Species of Wild Fauna and Flora and is an international agreement that regulates the international trade of endangered and threatened species including sturgeon and caviar, to ensure their conservation and sustainable use.
